Rib Bits

Two Cans Spam
8 tablespoons brown sugar
2 tablespoons vinegar
1 tablespoon Mario's red chile sauce (optional)

1. Preheat oven to 350 degrees F.

2. Quarter the spam in three directions making small bite sized squares.
Mix the other ingredients and pour over the spam chunks in a baking
pan so you end up with a thin layer.

3. Stir well to cover the spam chunks. Cook for about one hour,
until the color of the spam chunks starts to darken and the
texture of the chunks start to firm up. If they start to blacken, you've
gone too far.

4. Stir 2 or 3 times while cooking to even the spread covering.
Serve with toothpicks.

Optional, a mild BBQ sauce, like Stubbs, for dipping.


I added the chile sause to the recipe and called it spicy rib bits.
